Tomato Sauce with Marsala
- 500 g fresh tomatoes
- 1 small onion, chopped
- 30 g lean ham or bacon, cut into small pieces
- 1 clove of garlic
- 1 sherryglassful Marsala

- Fry the chopped onion in butter, add the ham or bacon then the peeled and
quartered tomatoes and the garlic. Season with salt and pepper and let the
sauce cook rapidly for 5 minutes. Pour in the Marsala and cook for 2 or 3
more minutes.
