Moussaka
- 500g Mince
- 1 Aubergine
- 2 cloves Garlic (crushed)
- 2 onions (chopped)
- 150mls tomato juice
- 2 tablespoons tomato puree
- salt
- Cayenne pepper
- oil
- 150mls Natural yoghurt
- 2 eggs
- 100g grated cheese
- Slice aubergine, place on plate and sprinkle with salt
- Fry onion and garlic in pan
- Add mince and brown
- Add tomato puree and juice, season with salt and a tiny pinch
of Cayenne
- Place in casserole
- Heat oil in clean pan and fry aubergine slices until browned
on both sides
- Place over meat
- Cover and cook for 40mins on 180°
C
- Meanwhile beat the eggs into the yoghurt and stir in the grated
cheese
- When meat is cooked remove lid pour cheese mixture over and
cook uncovered until top is nicely browned (15 -20 mins at 200°
